Sourdough pizza tastes so good!
I always thought that making sourdough pizza would be the biggest time-consuming faff know to man. Then Howard Starch, my sourdough starter, got a little over-excited in the warm weather and I decided it might be worth reading up on it. Yes, it takes a little while but most of that time you can leave the dough to do what it needs to do. You just have to go back to it a few times and pull it about a bit, then leave it alone again. Then, when it has completed its ‘big rise’, you chop it into portions and put it into the fridge until you need it (anything from a few hours to a few days). You take it out of the fridge to warm it, then shape it and smother it in your favourite topping combinations and whop it into a very hot oven. Within about 10 minutes (easily long enough to wash up and pour a glass of wine) you have fantastic sourdough pizza and the weekend has arrived!
